Fresh peas and wild garlic recall spring in the valleys. Severn and Wye smoked salmon nods to the rivers where legends were born. Our Excalibur lamb evokes the age of kings and deep‑rooted craftsmanship. Finish with Welsh cheeses, honey and mead, served as they have been for generations.
