Chef, Tim McDougall
Tim McDougall took up his first head chef position at The Celtic Manor Resort in 2008, following two years at the 2 Michelin starred Jean Bardet restaurant in Tours, France.
A relative latecomer to the profession, Tim’s natural flair and passion for food quickly shone through and a promising culinary career soon developed during time spent at a string of esteemed properties including Hartwell House Hotel, Le Poussin at Park Hill and Lords of The Manor.
Within the first year of Tim’s appointment as head chef, Celtic Manor’s flagship fine dining restaurant secured its place on the British culinary map when it was one of the highest new entries listed in the Good Food Guide 2009 and scooped the coveted accolade of 3 AA Rosettes.
According to the AA’s guidelines for three rosettes: “This award takes a restaurant into the big league. Expectations of the kitchen are high: exact technique, flair and imagination must come through in every dish, and balance and depth of flavour are all-important.”
When he’s not cooking up a storm in the kitchen, Tim likes to dedicate as much time as he can to his other great love, fishing – specifically beach casting along the beautiful South Wales coastline. He also spends much of his free time in the Loire Valley, France, visiting close friends from his time spent working in the region.
Restaurant Manager, Ronan Hunter
Ronan Hunter came to Celtic Manor in 2010 to head up the front of house team at Terry M. Originally from Ireland, Ronan has spent the past 10 years in managerial positions within some of the UK’s finest restaurants including The Castle Hotel, Taunton (1 Michelin Star), The Fat Duck, Bray (3 Michelin Stars), Angelus by Thierry Tomasin (both Hardens and Zagats Best French Brasserie in London).
Sommelier, Alex Saby
Head sommelier Alex Saby joined the team at Terry M in 2008. Prior to that he spent several years at Mallory Court, Warwickshire and Lords of The Manor, Gloucestershire, both Michelin starred establishments. Alex originates from Lorraine, France and has a keen interest in his local wines of Alsace.
