With four hotels, a 330-room luxury Resort Hotel, an historic 19th  century Manor House with 70 rooms, the 148-room Coldra Court  and the Newbridge on Usk country inn with six bedrooms – three  championship golf courses, a large convention centre, eight  restaurants, two exceptional spas and health clubs, ten luxury  lodges and an array of adventure activities, the Celtic Manor  Collection provides a complete experience for business, leisure and golf travelers.

Its unprecedented status as the number one conference hotel in the UK, alongside its growth in leisure market, has put it at the forefront of the UK hospitality industry. 

With further expansion planned in 2018 and beyond, we are  looking for talented individuals who are keen to take the first step  towards a career in the hospitality industry, by undertaking a 2 year  programme focussed on the operational aspects of the Hotel and  Hospitality industry. 

Working with some of the most experienced, energetic and  motivational managers in the industry, you will have an insight  into the operation of one of the UK’s busiest and most successful  hotels and resorts. Our ‘grow our own’ strategy is focussed on the  development of the next generation of operational professionals  who will help shape the future of the resort and the industry.

Operations Overview

Food & Beverage – 15 weeks

With 7 restaurants including 4 that are recognised by the AA with rosette status, 5 bars and further leisure dining facilities, the gastronomic offering delivered by the Resort is exceptional. 

Our flagship restaurant, Epicure is the epitome of our culinary  offering. Rafters, The Newbridge on Usk and our most recent  opening addition Steak on Six all offer diners an AA rosette worthy  experience, whist the Olive Tree, The Grill and our Asian inspired  restaurant Cen by Larkin Cen (Masterchef 2013) offer diners a more  relaxed casual dining experience. As part of the programme you  will be exposed to a number of these restaurants along with the bar  operation within Merlin’s, the Resorts iconic lounge and cocktail bar. 

Basic skills development is central to the food and beverage  teams’ success, while advanced skills in flambé, mixology and wine  awareness allow the development of a range of skills essentials  required for a career in the food service industry.


Conference & Banqueting - 15 weeks

Having won numerous awards including Best UK Hotel at the prestigious M&IT awards for 6 of the last 7 years, conference and banqueting is at the heart of the Celtic Manor business model and has been since the Resort hotel opened in 1999. 

Whether it’s dealing with private dining for 20 people or a  conference for over 1,000 delegates, the conference and  banqueting team prides itself on creating a seamless guest  experience. Led by a management team with multiple years’  experience in the industry and at the Resort, the Celtic Manor  way is at the heart of everything.


Front of House - Rooms - 15 weeks

At the centre of any hotel are the bedrooms and the Celtic Manor Resort is no different, with the 334 bedroom five-star Resort Hotel, the 69 bedroom four-star Manor House and a further 48 bedrooms in self-catering Lodge style accommodation, the Resort has a vast offering to the discerning and more budget conscious traveller. 

Our Front of House team epitomises excellence in the guest’s  arrival, onsite and departure experience. As part of the programme you will spend time with our concierge, front office and guest services teams, all of whose focus is to provide an exceptional experience to our guests prior to arrival, during and after their stay.


Housekeeping - Rooms - 15 weeks

Our guests expect clean, attractive, comfortable and welcoming surroundings that offer value for money. Nothing sends a stronger message than cleanliness in a hospitality operation. The sensation for a guest upon entering a spotless, tidy, and conveniently arranged room is one of the key reasons of choice. 

The housekeeping is responsible for cleanliness, maintenance, aesthetic upkeep of rooms, public areas, back of house areas and the surrounding environment. The effort that the housekeeping department makes in giving a guest a desirable room has a direct bearing on the guest experience as guest rooms are the heart of the hotel. 

It is rightly said that housekeeping is a 24/7 operation, imagine the stacks of linen needed to make up all the beds in our hotels; the quantities of amenities such shampoos, vanity kits, tea, coffee, biscuits and so on that must be placed in the guestrooms; the metres of carpets, floors, walls and ceilings to be cleaned and maintained; the countless pieces of furniture that must be dusted and polished and the barrels of cleaning chemicals along with special tools and equipment needed in order to clean these rooms. 

You will learn what it takes to deliver guest bedrooms to a five-star standard in a Resort which runs at a 90% occupancy over 400 bedrooms, you will also spend time within our Hunter Lodge operation, to fully appreciate the differences between a hotel and self-catering operation.


Culinary – 15 weeks

A brigade of over 80 chefs demonstrates the importance of food in the Celtic Manor offering. A fast paced, simmering environment where new ideas are encouraged calls for a calm temperament and a creative mind. You will spend your time working within a kitchen environment and will be guided and mentored by a senior chef, to allow you to develop skills that you never thought you were capable of. If you can’t cook at the start of the module, you certainly won’t starve at the end of it.


Coldra Court Hotel – 15 weeks

Our four star sister property the Coldra Court Hotel situated in nearby Langstone, has 148 bedrooms, health club, conference and banqueting facilities and The Rib Smokehouse and Grill, which is a popular restaurant with residents and the local market. The team at the Coldra Court, are required to be multi-skilled and can occasion be required to fulfil a number of roles within the team. As a smaller property, you will have the opportunity to experience how such a property operates, focusing on the collective effort of many within the team to ensure that a five-star guest experience is delivered in a four-star environment.
