An unmissable event for all budding chefs, join our fabulous culinary team as they hold a series of cookery demonstrations with a difference at The Celtic Manor Resort.
Throughout 2012, these culinary experts will showcase their skills in a number of live demonstrations, each featuring a different seasonal theme and creative ideas influenced by the restaurant’s menu.
Each demonstration will be followed by a glass of bubby and canapé reception, and a gourmet three course lunch with accompanying wines.

Saturday 28th April - ‘Rhubarb, Rhubarb’
Although not originally native to Britain, rhubarb is considered by many to be a bit of a national treasure, evoking fond childhood memories for some and opening up a whole world of flavours for those who are new to its charms.
Our renewed focus on home-grown, seasonal foods has once again made rhubarb the darling of celebrity chefs and home cooks alike and it has taken on a whole new persona, often now served with fish and meats, as well as remaining a versatile pudding ingredient.
In this demonstration you’ll learn how to make:
- Welsh Sewin with sorrel butter and coastal spring vegetables
- Woodland pork with homemade black pudding and poached rhubarb
- Spring chicken with morel mushrooms, braised beans and lettuce
- Spiced rhubarb with cane sugar jam
- White rum and rhubarb cocktail

Leg of Welsh lamb, young garlic and spring onion emulsion, tomato jus

Saturday 23rd June - ‘Wonderful Welsh Lamb’
We think that Welsh Lamb is simply the best - the product of a uniquely beautiful landscape that has been blessed for centuries with the purest clean air, sweet spring water, fresh grass and fragrant heather.
This blend of nature’s finest ingredients, coupled with traditional farming practices that span generations, have helped produce the very highest quality meat, awarded the coveted status of ‘Protected Geographical Indication’ by the European Commission, putting it in the same elevated company as Parma Ham and other fine speciality foods from around the world.
In this demonstration you’ll learn how to make:
- Barbecue lamb shoulder with mint oil, malt vinegar and wild garlic
- Loin of lamb with confit of new potatoes, baby onions and lamb ‘bacon’
- Roast cod loin with fresh pea and olive oil purée
- Cheap and tasty cuts of lamb with couscous and curried raisin purée

Three cuts of local Welsh lamb, confit of new potatoes, baby onions and beans
