Chefs triumph in cook-off at London's Hotelympia

Chefs from the Celtic Manor Resort were crowned champions in the hotels and restaurants category of a prestigious national culinary competition in London.

The Celtic Manor team were also awarded silver medals after holding off strong competition from Hertfordshire’s Grove Hotel at La Parade des Chefs, part of the Hotelympia event at the ExCel Arena.

The team of six chefs and one steward just missed out on the title of overall Parade champions as the Combined Services emerged as the only gold medal winners following four days of judging.

Every team was tasked with serving a three-course menu to 100 guests over a staggered two-hour service. The team of 6 chefs had to deliver the menu to show judges, diners and industry peers a true scenario of a realistic restaurant service.

They also had to produce the menu following rigorous guidelines on costings. Team captain Michael Bates, the Executive Head Chef at the Celtic Manor Resort, said:

It was a tough competition to deliver that sort of service in a strange kitchen but we were very pleased with the food we managed to produce under pressure. The judges were very complimentary about our work ethic and commented that we had “owned the kitchen”. We were up against a very strong team from The Grove so winning our category was a fantastic achievement.

Joining Mr Bates in the team were his fellow resort chefs Simon Crockford, Karl Jones Hughes, Gavin McDonagh, Gareth Pembridge and Adam Whittle, as well as chief steward Silvia Capelo.

Hotelympia Salon Culinaire Chef Director Steve Munkley said: “The Celtic Manor menu was selected for La Parade des Chefs as it demonstrated a nicely balanced menu which we felt would appeal to diners. It also included some interesting flavour combinations, using in some cases very humble ingredients, such as cauliflower, to produce a good-sounding dish demonstrating a number of skills.”

Following a starter of cauliflower with langoustine and a main course of Welsh duck with maple crackling, the Celtic Manor menu finished up with a dessert of chocolate, raspberry and coconut.
